Ingredients

  • 16 ounces spaghetti noodles
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 medium purple onion, finely diced
  • 2 medium tomatoes, diced
  • 1 large cucumber, diced
  • 1 bottle (16 ounces) Italian dressing

Instructions

  1. Cook spaghetti according to package directions until al dente.
  2. Drain and rinse with cold water to stop the cooking process and cool the noodles completely.
  3. In a large bowl, combine the cooled spaghetti, bell peppers, onion, tomatoes, and cucumber.
  4. Pour the Italian dressing over the salad and toss until everything is evenly coated.
  5. Cover and refrigerate for at least 1 hour before serving to allow the flavors to blend.
  6. Toss again before serving and enjoy!

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days. If the pasta absorbs some of the dressing, simply add a little more Italian dressing and toss before serving.
