Hearty Potato Soup with Turkey Bacon, Vegan Cheese, Broccoli & Carrots

Ingredients

  • 6 medium russet potatoes, peeled and diced
  • 1 package (12 oz) turkey bacon, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup broccoli florets, chopped into bite-sized pieces
  • 1 cup carrots, peeled and sliced
  • 4 cups low-sodium vegetable broth
  • 2 cups unsweetened almond milk (or unsweetened oat milk)
  • 1 cup shredded vegan cheddar-style cheese
  • 2 tablespoons olive oil
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried thyme
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • Green onions for garnish (optional)

Instructions

Step 1: Cook the Turkey Bacon

In a large soup pot, cook the chopped turkey bacon over medium heat until crispy. Remove and set aside, leaving about 1 tablespoon of drippings in the pot.

Step 2: Sauté the Vegetables

Add the olive oil, onion, carrots, and garlic to the pot. Cook for 3–4 minutes until the onion becomes soft and fragrant.

Step 3: Simmer the Soup

Add the potatoes, broccoli, vegetable broth, salt, pepper, smoked paprika, and thyme. Bring to a boil.

Reduce heat and simmer for 20–25 minutes, or until the potatoes are fork-tender and the carrots are soft.

*If you don't want your broccoli super soft, cook the potatoes about 15 minutes before adding the broccoli.

Step 4: Create a Creamy Base

Using a potato masher, mash some of the potatoes directly in the pot while leaving plenty of chunks for texture. This naturally thickens the soup without adding dairy.

Step 5: Thicken the Soup

In a small bowl, whisk together the cornstarch and cold water until smooth. Stir the mixture into the soup.

Step 6: Add the Creaminess

Pour in the almond milk and stir in the vegan cheese. Continue stirring until the cheese melts and the soup thickens slightly, about 5 minutes.

Step 7: Finish and Serve

Taste and adjust seasonings as needed.

Ladle into bowls and top with the turkey bacon, extra vegan cheese, and green onions if desired.

Serve warm with soft pretzels on the side.
